My cousin & his wife gave me a fabulous shirt which has the logo of my most favorite drink - WoodChuck Apple Cider! YUM! The shirt was a Large which is very suitable as a night shirt - BUT, I love this shirt and wanted to be able to show it off a bit. lol! Soooo it began with cutting and pinning and sewing.... TADA!! LOVE IT! As an added bonus so does my husband! :)

Advent Calendar

I finally went ahead and made an Advent Calendar - one that I will use every year, maybe change some activities which this year include 'Visit Santa', 'Make Cookies' and 'Go Sledding' just to name a few. I used cardboard from a box for the back, designed my graphics in photoshop & printed them out on linen paper, glued the bottom and sides down, cut out small cards for the activities, punch holed them and tied with yarn for easy lift from their places. I glued a ribbon to the back for easy hanging. Oh and I hand drew Baby Jesus and wrote Merry Christmas for the 25th. TADA! It'll get pulled out every year for Dec 1st! :) Have you made an Advent Calendar?

I said I wouldn't bother with coupons, BUT I NEED to and so far I have saved quit a bit and have a great stock piling! :) I've always shop sales, now I just add coupons and only buy if there are coupons... well some things you will need, ex. milk and don't have a coupon - those are exceptions...

I'm going to a Coupon Party with the good ol' Extreme Couponer Chrystie Corns this weekend & am pretty anxious. But I couldn't wait - I saw too many sales! So I looked up some help and found a blog with a Couponing 101 for Beginners & started reading.... I fast forwarded through the weeks and I'm pretty satisfied with my results so far - this is what came of the past 2 days....

Day 1: Rite Aid & Family Dollar

At Rite Aid, they have a wonderful Wellness Card program that saves you bunches of $, sign up if you haven't already! (You earn +Up dollars to use on your next purchase.) So with the Well Card, Sales & Coupons - it makes for great savings... but on my first day I was starting small....

I did 2 transactions.... the first one I bought the Blistex & Burt's Bees Cough Drops. The Blistex was $1.49 on Sale (Orig $2.99) and you got $1.49 +Up, the B.B. Drops were $1.49 on Sale (Orig $1.99) and you got $1.49 +Up. So in this transaction I spent $3.13 with tax, got $2.98 to spend on my next transaction & saved $2.00. Remember I was starting small. The second one, I needed to get earplugs for my son which were $5.99, Luden's Cough Drops $.99 on Sale (Orig $2.29), Henna Hair Care $2.79. I did not use coupons, just the Wellness Rewards. After sales & my $2.98 +Up the total was $7.28, a savings of $4.28 - it was a start. :)

At Family Dollar I used coupons...

Mean Green $5.50 with $1 Off Coupon

Dove Cond. $4.00, $3.75 on Sale, $.75 Off Coupon

Campbell Cream of Mushroom $1.50 for 14.50oz, $.40 Off any 3 Cream of Condensed

Scotch Tape $2.00, $.50 Off Coupon

On this trip I only shopped 1 sale, it was also a beginner trip - I did save $3.40 and got a $5/Off $25 or more for my next purchase! :)

Day 2: Rite Aid

With 2 transactions, I walked away today with a 60% savings!! Before Sales, Well Card & Coupons the total was $91.80 - After Sales, Well Card & Coupons I paid $31.29!! :)

My first one I made sure to purchase the items that I not only had coupons for but gave me +Up's. I wanted this transaction to total $20 plus tax - but with a few things that ended up in the basket due to other things not being available I was over $6.

The Blistex & Burt's Bees did not give me +Up's this time due to literally only allowed one purchase period, I thought per purchase but no just one. But I still got them on Sale!

2 Colgate Toothbrushes: 2 for $7.98, $6.00 +Up, $1 Off C, liking paying $.98 for 2

4 Rite Aid Hand Sanitizer: $1.00 with Well Card (Orig $3.29), Min 4, $4.00 +Up, liking paying $.00

Oral B Toothbrush: (they had no Scope, so I opted for this even though I had no coupon & since they gave me $2 +UP), $4.49 (Orig $6.49), $2.00 +Up, like paying $2.49

2 Cover Girl Makeup: $10.78, Buy 1 Get 1 50% Off (Orig $13.58), $8.00 Off C, Paid $2.79

So for this transaction I paid $26.46, Saved $28.86 & got $14.00 +Up for my next purchase, which was next....

2 Tres Semme Shampoo, $3.99 ea. w/ Well Card (Orig $5.79ea), Buy 1 Get 1 Free up to $6 C (the cashier honored the $2 extra dollars from the coupon since it was up to $6, some may not do this - she offered, I obliged) = $3.99 for 2

For this transaction after $14.00 +Up from #1 transaction, Sales, Well Card, Coupons = Paid $4.83, Saved $31.65 (This was my most exciting trip - to see the fact that I only had to pay under $5 for $37.00 worth of stuff!)

Today I also Grocery shopped with sales & coupons and was able to purchase a turkey for $.69/lb with a purchase of $25.00. I bought:

8 Progresso Soups, 4/$5, 2x $1 Off 4 C = $8.00

4 Hunts 28oz Tomato's, $.99/ea, $1 Off 4 C = $3.00

2 Roasting Chickens on Sale, $6/ea = $12.07

1 3pk Yeast Packets, 2/$3, $.40 Off 1 C = $.90

10lb Turkey = $7.18

My total before Sales & Coupons was $59.19.

After Sales & Coupons I paid $31.31 with a savings of $27.88, that's roughly 50%! :)

And that's it, my first Coupon Excursion and I'm sure not my last.... Hope you got inspired!

Green Tomato Salsa Verde - Recipe

Ohhh yummm- this recipe turned out great! My grocery store did not have any Anaheim's but I used another mild pepper and it worked. This salsa has a kick to it - but if whether you want it mild or hot, you can do either or! ENJOY!! :)

Ingredients

2 pounds firm, green tomatoes, cored and quartered
1 medium-sized yellow onion, peeled and coarsely chopped
1 fresh green Anaheim (or other large, mildly-flavored) chili pepper, stem and seeds removed, quartered
3 green jalapeño chilies (for a medium-hot salsa) or serrano chilies (for a hotter salsa), stems (and, if preferred, seeds) removed, quartered
3 garlic cloves, peeled and coarsely chopped
1 teaspoon sea salt
1/4 teaspoon ground cumin
1 tablespoon olive oil
3 tablespoons water
1/2 teaspoon fresh lemon zest
1 tablespoon fresh lemon juice
1 teaspoon honey or sugar
1/3 cup loosely packed cilantro leaves (coriander greens, dhania, etc.), coarsely chopped

Preparation

Combine the green tomatoes, onion, chili peppers, garlic, salt, cumin, olive oil, and water in a stock pot. Bring to a boil and cook covered on a medium-low heat burner for approximately ten minutes, stirring occasionally. Add more water only if needed to maintain the most minimal broth.
Stir in and simmer for an additional five minutes the lemon zest, lemon juice, honey (or sugar), and cilantro. Taste the mixture and adjust the seasoning, if needed, by adding more lemon juice, honey, and/or salt, to taste.
Spoon the mixture (in batches if necessary) into the container of a food processor or blender and pulse until the salsa reaches the consistency you prefer, either chunky or a smooth puree. Makes approximately one quart of salsa. This recipe may be doubled or tripled.

Before & After: 70's Sewing Bench

I collected this old 70's sewing bench from my parents basement. Although it looked horrible it was still very sturdy. It just needed a makeover. I painted a prime coat along with 3 coats of semi-gloss. I replaced the padding and fabric to unveil my new favorite piece of furniture with great storage.... Tada!

Hazelnut Time

I went hazelnut picking today - wearing gloves and rubber boots. The nuts are drying in their jackets and hopefully peeling them won't be to hard on my fingers. Hazelnut jackets have these horrible little needles that get into your skin and feel like they are there forever. But once we get them out and start cracken - Yummm.... :) Another great picking time in Northern Maine!

I found this yummy recipe while I was pinning (pinterest.com) the other day and decided to try it out. It's a KEEPER, better than store bought! Next time I will double the recipe to make 8, 3oz popsicles.

My little guy enjoying them!

Homemade Fudge Popsicles

Makes about 4 regular-sized popsicles (3 ounces).

2 tablespoons (3/4 ounce) semisweet chocolate chips or chopped semisweet chocolate
1/3 cup (2 1/3 ounce) sugar
1 tablespoon (1/4 ounce) cornstarch
1 1/2 tablespoons (1/4 ounce) unsweetened cocoa powder
1 1/4 cups whole milk
Pinch of salt
1/2 teaspoon vanilla extract
1/2 tablespoon (1/4 ounce) unsalted butter

In a medium the bottom of a medium saucepan over very low heat, gently melt the chocolate chips, stirring constantly until smooth. Stir in sugar, cornstarch, cocoa powder, milk and salt and raise heat to medium. Cook mixture, stirring frequently until it thickens, anywhere between 5 minutes and 10 . Remove from heat, add vanilla and butter and stir until combined.

Set aside to cool slightly then pour into popsicle molds. Freeze. If you’re using regular popsicle sticks (instead of the lids), freeze the mixture in the molds for 30 minutes then add the sticks.

I don't have a before photo - which I wish I had, but when I spotted this great pillow case with the spades like pattern and hot pink thread at my local thrift store - I had to give it a whirl! The first thing that flashed into my head was a pencil skirt - it had to be a pencil skirt! And so after measuring, cutting and sewing - this is what my finished product looks like. It may not be super perfect for my first - but it works - here's hoping to many more.... (oh & excuse the wrinkles - it needs a final steam)

Grilled Tuscan Chicken - Husband Style

My husband got his inspiration for cooking the 2 whole chickens we had in the freezer from an episode on Extra Virgin (see recipe here). He used his handy dandy chef knife and cut down both sides of the chicken's backbone and removed it. He loves to cook over an open fire and is a pro at it - so after soaking the chickens overnight in his own italian-esque marinade, he placed them skin-side down on the grill rack with foiled-bricks on top of them. These came out so AMAZING! If you have the time & desire - this should be a must for one of your meals! Buon Mangia! ;)

Chewy Cappuccino Crinkles

I got this recipe from my Better Homes & Garden Best-Loved Cookies Magazine Insert. They are super yummy! :)

Ingredients:

1/3 cup butter, softened

1 cup packed brown sugar

2/3 cup unsweetened cocoa powder

1 tablespoon instant coffee granules

1 teaspoon baking soda

1 teaspoon ground cinnamon

2 egg whites

1/3 cup vanilla yogurt

1 1/2 cups all-purpose flour

1/4 cup granulated sugar

Directions:

1. Heat oven to 350 degrees F.

2. Beat butter in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds.

3. Add the brown sugar, cocoa powder, coffee granules, baking soda, and cinnamon.

4. Beat until combined, scraping sides of the bowl occasionally.

5. Beat in egg whites and yogurt until combined.

6. Beat in as much of the flour as you can with the mixer.

7. Stir in remaining flour with a wooden spoon.

8. Place granulated sugar in a small bowl.

9. Drop dough by heaping teaspoons into sugar and roll into balls.

10. Roll again in sugar.

11. Place balls 2 inches apart on an ungreased cookie sheet.

12. Bake for 8 to 10 minutes or until edges are firm.

13. Transfer cookies to wire racks and cool.

Clothes Pin Dress - Easy DIY!

I recently made a very cute Clothes Pin Dress getting the inspiration from the one my mother had. After tracing, cutting, sewing etc..which is the long way in this circumstance. I figured a short way to do it especially if you don't have an inspiration to follow physically. First go to the thrift store and buy a baby girl dress for $.25 cents, turn it inside out, sew the bottom, turn it inside out again and tada you've got yourself a very Cute, Easy DIY Clothes Pin Storage Dress! :)

A Classic Lemon Cream Tart

A CLASSIC LEMON CREAM TART
Makes 1 (12-inch) tart

1 3/4 cups vanilla wafer crumbs
1/3 cup butter, melted
1/4 cup firmly packed brown sugar
1 cup butter
1 1/4 cups sugar
1/2 cup fresh lemon juice
6 egg yolks
1 large egg
1 cup heavy whipping cream
Garnish: sliced lemons

1. Preheat oven to 350°.
2. In a medium bowl, combine crumbs, 1/3 cup melted butter,
and brown sugar. Press firmly on bottom and up sides of a
12-inch tart pan. Bake for 10 minutes; let cool.
3. In a medium saucepan, melt 1 cup butter over medium heat.
Whisk in sugar, lemon juice, egg yolks, and egg. Cook over
medium heat, stirring constantly, for 10 minutes or until
thickened. Remove from heat, and cool completely.
4. In a medium bowl, beat cream at medium-high speed with
a mixer until soft peaks form. Fold whipped cream into
cooled lemon mixture. Spoon into prepared tart shell. Cover
and refrigerate overnight. Garnish with lemon slices, if desired.

this one I have decided is for me - I may be able to wear it a few times for the rest of the season, being that I live in Maine. I love it! I made it with 100% deep olive green Peruvian Highland Wool and 100% kelly green Acrylic yarn. I added a beautiful large wooden button for added detail. I will be making more of these cowls for next winter come fall time - I will be blending wool and acrylic yarns together with my special pattern. These are not super photos due to the fact I took them with my photo booth - so the justice is not there but you can get the idea.... ;)

Today I made a trip to a favorite shopping spot of mine since junior high - my town's local thrift store. I scored very big on these wonderful Eddie Bauer mid calf high heel cowboy like boots! The best part is that they had never been worn, oh, and that I got em' for $2.00!!! :O SA-WEET!

I also scored this new maroon corduroy jacket, $2, to make a nice match with the boots!

It was a fab day for finds!! :)

I stumbled upon this recipe in one of my Quick Cooking magazines from 2003. This recipe works out great for my little guy and it's actually pretty yummy....

Pizza Pancakes

Ingredients:
2 cups Biscuit/Baking mix
2 tsp Italian Seasoning
2 eggs
1 cup milk
1/2 cup shredded Mozz. Cheese
1/2 cup chopped Pepperoni
1/2 cup chopped Plum Tomatoes
1/4 cup chopped Green Pepper (optional)
1 can (8oz) Pizza Sauce, warmed

In a large bowl, combine the biscuit mix and Italian seasoning. Combine eggs and milk; stir into dry ingredients just until moistened. Fold in the cheese, pepperoni, tomatoes & green pepper.
Pour batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbles form on top; cook until the second side is golden brown. Serve with pizza sauce. Yield: 14 pancakes

The can top snowman is such a great idea, I plan on saving some tops, painting them and attaching them to gifts next Christmas. The tractor ornament is for Sam's 3rd Christmas - they had ran out of green...

Entertainment Center into Sam's Play Kitchen!

Talk about a fun project! My husband and I put our heads together and with the inspiration of some we've seen on the net, we came up with this GREAT PLAY KITCHEN from an old entertainment center!! Our goal was to make this for Sam for Christmas and it turned out wonderful!

First it was to find an entertainment center! After posting a request on facebook, a couple friends let us have the one that was chillen in their garage for a year. When we picked it up, I was happy to see it was black, that equalled, 'No Painting!' :) It needed some TLC, so after we did some re-enforcements on it, it was a good base to start with!

Second, we planned it all out - down to the food!

And, this is what came of it....

The Stove Top swirls were done with permanent marker.

We spray painted the Stove, Oven & Fridge Door Silver.

We painted the Oven knobs black and Sink knobs red & blue.

The Faucet was made from wood, and the oven window was

the plastic cover from the pan that serves as the Sink!

Found food images online and printed them out,

modge-podged them onto cut out blocks of wood

on both sides.

Made Pizza Toppings from a wooden dowel

and cookies from wooden door knobs.

The final Cookies!

We replaced the real cutter blade with a wooden one.

Cut out cardboard pizza pan!

Eggs made out of felt and yellow marker.

At Easter I'll get some eggs and put the yolks in them.

We got a lot of the utensils and pots from my parents basement, thrift store & dollar stores. The whole thing cost us about $40-50 dollars! Well worth it! I hope this will be a family heirloom, something to pass down! :) I think the fabric I chose fits it well, adding fun color to the 'modern' black and stainless steel. There is a framed winter scene that can be switched out per season and a coat hanger for the pot rack! Gingerbread Biscotti - A MUST!

Oh these turned out even better then the Pumpkin Biscotti! - the baking time on these were better to get the right crispiness. These are gonna make great add on gifts wrapped in cello bags - Oh the Holidays...

Gingerbread Biscotti

Ingredients:
1/2 cup butter, softened
1/2 cup sugar
1/2 cup firmly packed brown sugar
1 Tblsp ground ginger
3/4 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
2 eggs
3 Tblsp mild molasses
2 1/2 cups all-purpose flour
2 tsp baking powder

Directions:
Heat oven to 350*F. Combine butter, sugar, brown sugar, ginger, cinnamon, nutmeg and cloves in large bowl. Beat at medium speed, scraping bowl often, until well mixed. Add eggs; continue beating until well mixed. Add molasses; continue beating until well mixed. Reduce speed to low; add flour and baking powder. Beat until well mixed.

Divide dough in half. Shape each half into 12-inch log on lightly floured surface . Place logs 3 inches apart onto lightly greased large cookie sheet. Flatten logs slightly.

Bake for 22-25 minutes or until tops are cracked and logs are golden brown. Remove from oven; cool 15 minutes on cookie sheet. Reduce oven temp to 325*F.

Carefully place logs onto cutting surface. Cut into 1/2 inch diagonal slices with serrated knife. Place cut-side down onto ungreased cookie sheets. Return to oven. Bake 9 min's; turn slices over. Continue baking 5-7min's or until dry and crisp. (After turning I baked them for another 9 min's)
Cool Completely.

Homemade Pumpkin Pie Ice Cream

YUMMM! I made this for Thanksgiving Day and it was a definite hit! My Memere, 'Grandmother' couldn't get enough of it, it was so funny to watch her. I see myself making this every year - yea to another new tradition! :)

HOMEMADE PUMPKIN PIE ICE CREAM
Ingredients
3/4 cup sugar,
2 eggs,
2 cups heavy cream,
1 cup milk,
1 large can pumpkin pie mix
10 oz package of shortbread cookies
Materials
Electric mixer,
Ice cream maker,
10 lb. bag of ice,
1 box ice cream salt
Directions
Step 1:
Put the ice cream can in your freezer to get cold.
This helps the ice cream to harden quicker when it's in the maker.
In a big bowl, blend the eggs, cream, milk, sugar, and pumpkin pie mix using an electric mixer. (If you prefer to make your pumpkin pie filling from scratch, you may use that) Pour this mixture into your cold ice cream can.
Step 2:
Put the ice cream can into the ice cream maker, fill the sides alternately with a layer of ice, then a layer of salt, then a layer of ice, etc. until it's filled
to the top. Plug it in and let it do its thing. Add more ice and salt every time
the level starts to drop.
Step 3:
How long it takes to set up depends on several things. Most importantly, the amount of salt you use. Be extremely liberal with it otherwise your ice cream will never harden. And, as mentioned above, outside temperature also affects this. Ideally, anywhere from 20-45 minutes should do it. You'll know when your ice cream is done because the bucket will stop on its own.
Don't Forget the Crust!
Step 4:
While your pumpkin pie ice cream is churning, you can get the "crust" ready. Dump the package of cookies in bowl and break them up with a fork or spoon. When your ice cream is done churning, transfer the ice
cream from the can to some sort of plastic container with a tight-fitting lid. Once you have made the transfer, stir all of your broken cookie bits into your ice cream.
Step 5:
You can eat the ice cream right away or put it in the freezer
for later savoring.

Refashioned Pink Sweater - New Etsy Listing

After seeing this cute soft pink acrylic sweater, I thought it would be great as a hat, neck warmer and fingerless gloves set! I added large 1 1/2 inch purple/pink fabric homemade buttons to both sides of the hat and used a contrasting purple/pink thread for sewing. The hat is 22" in circumference and fits a bit loose, not snug. The neck warmer is 18" long and 4" wide and has a pearl button snap closure. The fingerless gloves are 9" long and 5" wide at top that set from the bottom of the pinky to the middle of thumb. There is a 1/4 inch difference between the sewn edge of the gloves with the contrasting thread showing but does not effect the lengths. I think this 'one-of-a-kind' would make a cute fashionable set to someone who not only loves pink & purple but appreciates unique homemade items! :)

Hand Wash with luke warm water and detergent. Lay flat to dry.

Guinness Chocolate Cake

Cake Ingredients

1 c. and 2 tbsp unsalted butter
1 c. Guinness
3/4 c. Dutch process cocoa, sifted
2 + 1/4 c. all purpose flour, sifted
2 tsp. baking soda
2 c. sugar
2 medium eggs
2/3 c. sour cream
1 tbsp. good quality vanilla extract

Frosting Ingredients

1 + 1/3 cup cream cheese
1+1/2 c. powdered sugar, sifted
2/3 c. cream, whipped

Instructions

Preheat oven to 350F.

1. Add butter, cocoa and Guinness to a saucepan. Warm over a medium heat and stir until melted. Set aside for 5 to 10 minutes to cool slightly.

2. Add flour, baking soda and sugar to a large mixing bowl and mix together well. Pour in the Guinness/cocoa/butter mixture, lightly combine, add the vanilla, eggs and sour cream and beat everything together until well combined. The batter should be thick and dark chocolate in color.

3. Pour into a greased and lined 10″ angel food pan (or another straight-sided tube pan) and cook in the oven for 1 hour to 1 hour 15 minutes, or until a skewer comes out clean from the centre of the cake.*Note: This cake is very moist inside, so use your judgment regarding the skewer test. Do not leave in the oven until the cake has totally dried out — cook long enough so there is no uncooked cake on the skewer but there may be a few moist crumbs sticking to it after an hour of cooking. [Please note: Katie baked this in an 8.5" x 3.5" pan. If you make this in a regular angel food cake pan, you should start checking for doneness at least 15 minutes early.]

4. Leave to cool for 10 to 15 minutes before removing from the cake tin and placing on a wire wrack to cool completely.

Frosting Instructions

1. Place the cream cheese into the bowl of a mixer and beat on a low-medium speed using a whisk attachment (I find a paddle attachment tends to over-beat the cheese). Whisk until the cheese is smooth and there are no big lumps remaining.

2. Gradually, using a large spoon, add in the sifted powdered sugar and beat gently to combine. After 2 to 3 minutes, stop the machine, scrape any excess frosting from the sides of the bowl and beat on medium speed until lump free.

3. Remove bowl from mixer and gently fold in the whipped cream, mixing to fully combine.

4. Place cooled cake on a cake stand and add the frosting, spreading out just to the edge without going over the side (never go over the sides of the cake) until the cake resembles a pint of the creamy black stuff! The idea is to capture the essence and simplicity of a pint of Guinness.

Pumpkin Spice White Hot Chocolate

Ingredients:

4-5 cups whole milk
12 ounces white chocolate, chopped
4 teaspoons cocoa powder
3/4 teaspoon vanilla extract
1 cup pure pumpkin puree
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cardamom
1/8 teaspoon allspice
1/8 teaspoon ground ginger

Directions:

In a heavy saucepan, combine 2 cups of milk, white chocolate, and cocoa powder. Cook over medium heat, whisking periodically, until the chocolate is melted and the mixture is well combined. Whisk in the pumpkin puree, cinnamon, nutmeg, cardamom, allspice, and ginger. Add the remaining milk, 1 cup at a time, until the desired consistency is reached.

If desired, serve topped with whipped cream and a sprinkling of nutmeg. Just be sure not to fill the mugs too full before adding the whipped cream, or you might have some overflow.

A friend of mine was kind enough to tell me that her mother-in-law (whom is a drama teacher at a local high school) was selling old costumes for way cheap. So not really knowing what I was gonna find went with my friend to check it out, and I must say I was overwhelmed at first, but then I ended up leaving with 2 bags and a box of stuff! All for what she was gonna sell me for $3 - I gave her $8. SCORE! In that wonderful pile of stuff, I added a few items to my wardrobe - a very cute 70's inspired jumper dress, a great pair of knee high boots, 2 aprons and a newspaper boy hat for my son! I scored on a vintage wedding dress that needs some extra TLC and I am in hopes one day I can sell it to a beautiful bride to be.

As far as the rest of the stuff, I have many Halloweens taken care of! :) (and for Nick too)

Pumpkin Biscotti

Ohhh these Pumpkin Biscotti's are just simply yummy! Great recipe! They pair so well dipped into your morning coffee, or afternoon. :)

Pumpkin Biscotti Recipe

Ingredients

2 1/2 cups of flour

1 cup of sugar

1 teaspoon of baking powder

1 teaspoon of cinnamon

1/2 teaspoon of nutmeg

Pinch of ginger

Pinch of cloves

Pinch of salt

2 eggs

1/2 cup of pumpkin purée

1 teaspoon of vanilla extract

Directions

1 Preheat oven to 350°F. Sift together the flour, salt, sugar, baking powder, and spices into a large bowl.

2 In another bowl, whisk together the eggs, pumpkin purée, and vanilla extract. Pour the pumpkin mixture into the flour mixture. Give it a rough stir to generally incorporate the ingredients, the dough will be crumbly.

3 Flour your hands and a clean kitchen surface and lightly knead the dough. Lightly grease a baking sheet or line it with parchment paper. Form the dough into a large log, roughly about 15-20 inches by 6-7 inches. The loaves should be relatively flat, only about 1/2 inch high.

Bake for 22-30 minutes at 350 F, until the center is firm to the touch. (Feel free to also form two smaller logs for cute two-bite biscotti; just cut the baking time to 18-24 minutes.)

4 Let biscotti cool for 15 minutes and then using a serrated knife cut into 1 inch wide pieces. Turn the oven to 300 F and bake for an additional 15-20 minutes. Cool completely. Biscotti may be still a tad moist and chewy, so if you prefer it crisp let it sit uncovered overnight in a dry space. Serve and enjoy. Makes approximately 15 cookies.

(The way I divided the logs, I was able to get 2 Dozen medium sized )

Creamy Pumpkin Pasta

This dish turned out super yummy - Sam ate it all up! Instead of using Sweet Italian Turkey Sausage I used left over Maple Breakfast Sausage. It was such a great pairing! I also used black pepper instead of the white and used Mozzarella Cheese in substitute of the Romano. Definitely an every fall dish! :)

Creamy Pumpkin Pasta

2 garlic cloves

2 tblsp olive oil

1 pound package of Sweet Italian Turkey Sausage (removed from its casing)

2/3 cup to 2 cups pumpkin puree (depending on your personal taste)

1 can chicken broth

1/4 cup half & half

1/2 cup sour cream (low-fat or fat free)

1/4 tsp nutmeg

1 tsp salt

1/4 tsp white pepper

1 tsp sage

2 tbsp fresh parsley, minced

1/4 cup Romano Cheese, shredded

1 pound penne or rotini pasta

In a large skillet sauté the garlic in the olive oil on medium heat. Add the turkey sausage and cook until no longer pink, breaking the meat up with your spoon as you cook it. Remove turkey sausage and garlic from the skillet. Pour the chicken broth into the skillet and deglaze the pan using a wire whisk, to bring up all of the flavors stuck to the pan. Whisk in the half and half, sour cream, pumpkin, and seasonings. Simmer for ten minutes. Meanwhile, boil the pasta in salted water until al dente. Drain pasta and stir into the pumpkin mixture along with the turkey sausage, simmering for another three minutes or until the sauce thickens and hugs the pasta. Stir in parsley and garnish with Romano and more parsley.

Side Note- If the sauce is too thick, thin it with a little addition of chicken broth until you get it to the right consistency.
